Coconut-Molasses Muffins

2 cup(s) AM Whole Wheat Flour

2 teaspoon(s) Non-alum baking powder

1/2 teaspoon(s) Sea salt (optional)

1/2 teaspoon(s) Ginger

1 cup(s) Flaked unsweetened coconut

1/4 cup(s) AM Unrefined Vegetable Oil

1 Egg or egg replacer

2/3 cup(s) Buttermilk

1/2 cup(s) Unsulphured molasses

-OR- honey 1 teaspoon(s) Pure vanilla

In mixing bowl stir together flour, baking powder, salt, ginger and coconut. Mix liquid ingredients and add to the dry mixture until moistened. Fill well-greased muffin tins 2/3 full. Bake at 350 F. for 20-25 minutes.

Coconut oil is awesome. I disvcoered it recently too. You might want to consider avoiding oatmeal, potatoes, bread, and rice etc. I have been avoiding all carbs especially sucrose and high fructose corn syrup as well as all partially hydrogenated vegetable oils and I feel and look great. I also lost about 25 lbs in the past 2 months. Thanks for the info. Fructose in sucrose and HFCS is very bad for you. Fats we need are omega 3 (and less so of omega 6) and this coconut oil. Eat it everyday
